The Perfect Meal

We all love grilling outside in the summer and sometimes you just want an easy meal for friends/family. This recipe is perfect for you. It has a great flavor profile, its easy to prepare and this will impress your guests.

The Marinade

You can buy a teriyaki marinade but for this one we will make our own marinade. The marinade should be enough for 3 large chicken breasts. You will want to reserve some of the marinade for a basting sauce later.

Combine the following ingredients and bring to a boil. Whisk the ingredients together. After the sauce thickens (a few minutes) remove from the stove.

  • 1/2 Cup Soy Sauce

  • 1/2 Cup Brown Sugar

  • 2 Minced Garlic Cloves

  • 1/4 - 1/3 Cup Pineapple Juice

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

In a separate bowl combine the below ingredients.

  • 1 Tablespoon of Water

  • 1 Tablespoon of Corn Starch

Add this corn starch mixture into the sauce mixture and whisk slowly to combine the ingredients.

The Chicken

Cut the boneless chicken breasts into 1” cubes. I use a gallon ziplock style bag for the chicken and the marinade. I would recommend marinating the chicken for at least a few hours.

The Skewers

I like to use metal skewers but bamboo ones work fine too. I like the metal skewers because you can reuse them and there are no issues with them burning. You can feel free to use whatever you would like on the skewers but I used:

  • 2 Red Peppers

  • 1 Green Pepper

  • 1 Red Onion

  • Cubed Pineapple

There are no wrong ways to do this but you can see from the picture above how I laid out these skewers.

Fire up that Grill!

Pre heat your grill to 350 Degrees F. I used a charcoal grill but I kept the grate at a higher level. This is to prevent any burning of the skewers.

Were getting there

Rotate your skewers to make sure that your getting that great caramelization on both sides. Check the internal temperature of the chicken. When the chicken internal temperate is 165 degrees F, take the skewers off the grill. Baste the skewers with the spare Teriyaki (unused) marinade. Be prepared to see some huge smiles on your guests faces when you serve these!

How to cook Chicken Teriyaki Skewers

The Marinade
  1. Combine the soy sauce, brown sugar, garlic, pineapple juice, salt, pepper and bring to a boil. Whisk the ingredients together. After the sauce thickens (a few minutes) remove from the stove.
  2. Combine the water, corn starch in a separate bowl and whisk together. Pour the mixture into the marinade and whisk slowly to combine the ingredients.
  3. Cut the chicken into 1" cubes and marinade in a Ziplock bag for at least a few hours.
  4. You will want to reserve some of the unused marinade to brush on the chicken before serving.
The Cook
  1. Preheat your Grill to 350 degrees F
  2. Place the skewers over direct heat.
  3. When the internal temperature of the chicken hits 160 degrees, brush with the reserved unused marinade.
  4. Remove the skewers from the grill when the chicken internal temperature reaches 165 degrees F.
