Grilled Scallops

What is your favorite grilled seafood? One of my favorites are grilled scallops. They are one of the quickest types of seafood to grill and when done right they taste amazing.

I recently picked up some U-10 Scallops from Lobster Anywhere. These scallops are the perfect size for grilling. I like to pat the scallops dry with a paper towel. Then I seasoned the scallops with some Sea Dog Rub from Code3Spices. A light coat of this rub is all that you need. It gives the scallops a great savory taste.

The best way to grill these scallops is to use cast iron. This can be done on a grill or on a stovetop. I used my Kamado Joe and got the cast iron griddle very hot. Always preheat the cast iron or you wont get that perfect sear. The grill temp was around 400 degrees. You will want to coat the cast iron with some coconut oil or some butter. 

 

I grilled the scallop rub side down until I get the color that Im looking for. Then I flip them with some tongs. When do you know when scallops are done? I go mostly by feel and this takes some time to get this perfect. When done right they shouldn't taste raw and they should not taste chewy. If they taste chewy they are overcooked.
